Shir HaNosh TV is back for November! This time, Reba Meshulam will teach us another Sephardi dish: Spinach Keftes (like spinach latkes).

Ingredients:

1 bag frozen chopped spinach (Trader Joes organic is my fave) , microwaved for 5 minutes in glass bowl covered with a paper towel.  Cool and squeeze dry using cheesecloth or strainer.

1 half of a large yellow onion chopped very small

2 eggs

1 tsp kosher salt or sea salt

½ to ¾  cup matzo meal or bread crumbs (I use onion flavored GF matzo and crush it in food processor)

½ tsp ground cinnamon

½ tsp garlic powder

½ tsp onion powder

Canola oil for frying
